You should be able to easily customize the image to use e.g. XFCE instead of unity...
And you can also easily add these extra packages you mentioned...

live cd should not only be the code running paparazzi, but should contain gis tools like openstreetmap, wine, gps tools,
flightgear, digital video image stabilisation software, licence plate recognition, moving maps, frequence monitoring with dab stick,
software for ADS-B receiver, nasa digital elevation map, dgps base reference station software, ... .

If you want to make a new live CD (can be converted to bootable usb stick), I would strongly suggest to base it on Ubuntu 12.04 LTS.
Then add the paparazzi ppa and the packages in there...

for testing, it could be advantageous.
 
Tell me what do you think and what packages is needed.  The proposed live cd will be based on knoppix http://www.knopper.net/knoppix/index-en.html
and the usb add-on use overlay FS in order to be transparend for the user and that the base linux distribution don´t need to be updated that often.
