There are multiple advantages.
1) you can assemble all the commands you use together in one or more
palettes which you can dock at the side or top of your display.
2) you can give them names which you remember.
3) you can write special instructions about using them that you might
forget in the tooltip.
4) you can still access them from the keyboard without having to set a
short cut and remember it.
5) you can add palette buttons that create specific things like your
personal copyright line, rather than invoking the general copyright
command.

I haven't given any serious thought to that - I've only peripherally
come into contact with them. It would be interesting to know if they
could be used with Denemo.
