Hi Florin,

there would be some difficulties:
-No on-board data logging at the moment
-GPS won´t work at the speeds/altitudes needed (most of them..)
-sensors are not suited for the high g use

Of course, everything is possible, its open source!!

Side question: Why you need roll stabilization? Most sounding rockets I know 
are spin stabilized..
