Is there any reason why you can not identify the culprit by running
top, ordered by memory consumption, whenever the problem occurs?  I
guess you can also use ps if you prefer static output.

You can just start top and press `h' to see how to specify sort order
(it varies with the top implementation).  The actual options you have
to give to ps to sort by size or resident memory also vary from
implementation to implementation, but they are in the man pages.
