saving structs is possible w/ more recent versions, e.g. the current 2.9.9:
octave:113> foo.x = 1
foo =
{
x = 1
}
octave:114> save saved_foo.txt foo
octave:115> clear foo
octave:116> load saved_foo.txt
octave:117> foo
foo =
{
x = 1
}
