I haven't tried using v-tails myself. But don't you just need to combine aileron and rudder? Based on the examples for elevons your case would look similar to:

<command_laws>
    <let var="rudder"             value="@YAW  * 0.5"/>
    <let var="elevator"           value="@PITCH * 0.5"/> 
    <set servo="THROTTLE"         value="@THROTTLE"/>
    <set servo="RUDDERVATORS"     value="$elevator + $rudder"/>
</command_laws>

Again, I have never tested this.
