Adding the environment variable LIBGL_ALWAYS_SOFTWARE=1 works around the plotting bug.

flatpak install octave-repo org.gnu.Octave
flatpak run org.gnu.Octave

If any Octave developer is interested, he could get push-access to the
Flathub repository.
