this (could) be an issue with gnuplot 4.2.X if you're using the linux version.  
The postscript terminal of gnuplot 4.2.X does not support utf8.

Two options here:
1.) get the (patched) version from opensuse, it works there because I fixed 
it,
2.) use gnuplot 4.3, this issue is fixed there.

and if I am wrong regarding your os forget about my comments :-)

P.S. and if someone needs this to interface to TeX he'd give me a note, I have 
some nice tools for optimizing gnuplot output for TeX interfacing.

if you really want to see the pictures above - use some font
with constant spacing like courier! :-)
