Hi,
        Instead of replacing, insert "unstable/main unstable/crypto" (no
quotes) after local/main, and before stable/*.  This is the order in which
it searches for packages, so you can still find things in stable if
there's no unstable version.  UseBinaryDist is entirely up to you, fink
will fall back to compiling from source if binaries are unavailable.  (I
don't believe binaries are available for the unstable tree, so most of the
time, it will compile from source anyhow.)
