Joe,

Builds under OS X are not always easy. (I've been trying to build octave
from source for a year, without success, but things are getting better.) To
diagnose your problem, a bit more information is needed. Are you building
from a download or from fink or some other source? What version of OS X are
you using? What version of Xcode? Etc.

Having seen similar error messages a year ago, my bet would be that you
don't have some gnu TeX files installed, since they don't arrive with OS X.
They are used only to create documentation. Your installation may work
without it. Have you tried to "make install" or "make test" octave?

Also, I had trouble because I had Xcode 1.5 instead of Xcode 1.2 installed.
To further confuse things, there is a November 2004 patch to gcc 3.3 that is
available from Apple.

If you're willing to live with 2.1.57, have a look at
http://hpc.sourceforge.net/. It has both octave and octave-forge with a
relatively easy binary install.

Good luck, and let me know if you succeed. I want to try again.

Another Joe.
