I don't think gnuplot can do it. If you know Tcl/Tk, I suggest
you just save the data to a file and plot it with BLT (it's a
package for Tk, see www.scriptics.com). BLT lets you do everything,
and I mean everything, in a dozen lines of Tcl script.
