Users are accustomed to see certain links colours and nowadays is not a

That's only true for links inside a text block. Menus usually show regular text and change the background (or foreground) color of the item that is being hovered over or the 'current' menu item instead of having (different shades of) blue underlined text. For example, see www.gnome.org.
