Hi Tom,
See the "Evaluating code blocks" section of the manual for information
on how to pass header arguments to #+call: lines
http://orgmode.org/manual/Evaluating-code-blocks.html#Evaluating-code-blocks
something like
#+lob: elispgantt(table=gantttest) :results latex
should work
