Your email arrived just after I left on vacation, but I saw it posted
up and that gave me the opportunity to mull it over.
The straight answer is:
        View->Score Layout
and click on "Customize" don't replace the Standard Layout then invent
a name for your customized layout. Then use the buttons labelled "X" to
delete unwanted stuff - Attached is a couple of screenshots showing a
default score layout of a score with two staffs and a Custom Layout
where one of the staffs has been deleted from the layout.

So, that should all work fine. However

1) On testing this out I found a bug, which I am pretty sure has been
introduced since the release - in some circumstance when you delete the
only layout it is no longer automatically re-creating the Default Score
Layout.

2) What I was mulling over was this: when you have created the custom
layouts you want, the next thing to do would be to make a template out
of the resulting score. This you can do, and when you reload the
template and put some new music and lyrics into it you can select the
layout you want and print it just fine. But, the titles can only be
edited in the LilyPond view - quite messy. I think this is a design
flaw - the titles should come into the same category as the notes and
lyrics, that is, not part of the score layout. I have some ideas about
avoiding this, but for the moment once you have saved and re-loaded the
score any custom score layout is reduced to LilyPond syntax and can
only be edited in the LilyPond View. And that includes titles, key and
time signatures, as well as more structural things like which staff is
a mirror of another.

Post up a skeleton score (on bar, one chord/syllable) of what you want
to customize if you run into any problems.
