Right, that is the intended effect - attached is how I would have
imagined such a thing to be done. In that the chorus and verses are
typeset as separate movements and I've turned off ragged-right on each
movement (which might not be needed if there was more music).

But if the music really should just run on (one of the examples you give
has the verses starting in mid-line) then using underscores is the only
thing I can think of, but if that seems unduly clunky it might be worth
asking on lilypond-user, as there may be a mechanism in LilyPond for
turning lyrics on and off that could make it neater.
