I don't think this is related to GRUB.

First, there are two errors. [-: The kernel can't reach the
portmapper (to get the port of nfsd) and even on the default port it
had no luck.
Is the portmapper running? What are /etc/hosts.* saying? Maybe
portmapper not allowed to answer. If everything looks okay, double
check with a NETWORK MONITOR like tcpdump or ethereal. What is the
netbook client requesting and what is the answer??
I know two packages for booting via network "netboot" and
"etherboot(?)". Even if you don't use them, there mailing lists
archives, websites and FAQs could be a better help in this case (even
if it is out of their role, too...)
