Thanks for the hints.  Unfortunately let-binding those variables did
not have any effect in the provided example.

Hm, a pity that Emacs' default docTeX mode fontifies the documentation
parts with a single face.  If that were not the case I could file a
bug report because the default mode suffers from the same problem.
You can see it if you set `font-lock-doc-face' to nil.
