You could plot the images in the same axes and make the second (in)visible
(or invert the order) for switching between one and the other. Something
like:

axes ();
hold on;
h1 = imshow (I);
h2 = imshow (J);

## Now you want to see image "I"
set (h2, "visible", "off")
## Now you want to see image "J" again
set (h2, "visible", "on")
