To get better image processing and display in octave, I linked it to the image processing program ImageJ:
http://rsb.info.nih.gov/ij/
It is possible from octave to display images in ImageJ, run/evaluate macros, macro code, plugins, ... or get some graphical input like selection of an ROI. The implementation is not fancy at all, it uses ImageJ's server mode, sockets and intermediate files, but it does the job. I prefer the possibilities offered by ImageJ by far compared to what is offered in matlab. If people are interested, I could make this code available with some documentation.

I don't work in image or audio processing myself, although I

your colleagues could help us out by coding yourself whatever
functions you think are missing.
The only functionality I think octave is really missing when it comes to
image processing is the ability to plot on top of images. This will
become possible (from what I understand) when gnuplot 4.1 is released.
Otherwise I don't miss anything from matlab in octave.
