On the mac you need a Unix-like operating system to install Octave. Several
years ago I ran Octave on mac OS 8.6 under MachTen Unix from Tenon
Intersystems. This product was discontinued not long before Mac OS X came out.

Note that the current version of Octave (2.1.55) compiles easily under Mac OS X, so it may be worth a $300-$500 for you to purchase a used G3 machine and use
Octave on that.

If you don't want to purchase a new or used machine, your choices are:
- install Linux on your old mac (you can use Mac On Linux,
        http://www.maconlinux.org
to continue using your mac OS 7.5 if you want). There are several flavors of linux available for the Mac; I've used Yellow Dog Linux from Terrasoft.
        It supports most powerpc macintosh computers.  If you're using a 680x0
        processor, then you will likely need to use some other form of Linux.
        I don't have the experience to make a recommendation.
- obtain an old copy of MachTen Unix that will run under 7.5, then try to
        install Octave (not later than version 2.1.12, if I remember right).
        I recently threw away all of my old MachTen diskettes and CD's, so
        I can't help you here.
