I don't know anything about Objective-C CORBA bindings in particular,
but you'll probably find C++ CORBA stuff useful too. An excellent
book is:

  Advanced CORBA Programming with C++
  Michi Henning, Steve Vinoski
  Addison-Wesley Professional Computing Series
  ISBN 0-201-37927-9
