Yeah I haven't been messing with any of the settings lately except
CMDLINE_LINUX_DEFAULT.  Still, I will try explicitly defining
GRUB_TIMEOUT=5 and GRUB_TIMEOUT_STYLE=menu and see what happens...

Doesn't seem it changed anything... am I supposed to hold down the left
Shift key or repeatedly tap Esc?

Yes that may work in an emergency but it is very time consuming and
buggy which is not helpful.

Anyone understand what happened to the menu?  Really just need to get
that working again.

Shouldn't there be a way to just reinstall grub again?  I thought I did
that when converted to GPT, but maybe it needs it again...
