If you install Ubuntu using a minimal "alternate" install CD, it
doesn't boot the OS and you can then by using the gnewsense
repositories upgrade to gnewsense. Not sure how well it works, but I
saw it mentioned on the site somewhere.

installed, and let it just slowly install itself? I'm not sure if this is even 
possible, and it'd probably be messy.

What would be very nice, would be a server oriented gNewSense, or at least one 
without a gui, or just the minimal graphics deps.
