There is no way to hide/disabled fields provided by default with configuration. You must make code change for this.

Good day everyone,

I am new to Dolibarr and have been unable to find out how to disable the
fields that I don't need in the various modules. Please tell me that this
is a configuration setting that I somehow missed and not that I have to
modify the code to accomplish this.
