To print the stack trace with symbols you also need `-g` and better don't use optimization as that sometimes (or often) prints out wrong/misleading symbols. But then most users and distributions compile with -O2 and without -g. So IMO the only valid place for automated seeting these variables is the CI. (I set the vars in `~/.bashrc`).
