rdiff-backup --exclude '**dovecot**' /home/virtual /backup
will also exclude files NOT starting with "dovecot" but having it
somewhere in the middle - if you don't care about that, it's fine.
I would try
rdiff-backup --exclude '**/dovecot*' /home/virtual /backup
this will only exclude files/folders starting with dovecot.
