That's not happening here.  Can you give more detail and try a few
things?  E.g.,

What OS are you running on?

Does the --no-gui option when launching octave have the same broken pipe
issue?

After changing the graphics toolkit to gnuplot, are you seeing a valid
process in the "ps" list for gnuplot?

It works for me too. I'm using Debian with gnuplot 4.6 patchlevel 4. After setting GNUTERM=qt and running Octave 3.8.0-rc1, I don't see any problems with plotting with or without the GUI, and I'm definitely getting gnuplot's Qt terminal.
