Is it possible to monitor one log file but alert different people
depending on matches....

In english then something like:

If match "ERROR" then alert $person_A
If match "WARN" then alert $person_B

Monit allows to filter event types per user, but since the "match" event is common for all matches, it won't help in this case.

You can thus use more service checks for the same file with different alert recipients (note that this will require to check the same file n-times per each cycle, since the checks are independent).
