I don't know about ghostview but there's always pdftotext
from the xpdf port/package. You want to change its source
to not honour the "may not copy text" flag before compi-
ling, though.

Also, ghostview *might* be usable with framebuffer console,
if your operating system (e.g. MirBSD/sparc) supports that.
