So I'm guessing I've made a stupid mistake - the debian folder is supposed to go inside the linphone-3.6.1 folder, isn't it? *facepalm*
Anyway, I moved it there and ran "debuild -b -uc" again and got a different error this time. I put it in pastebin since the full output was so long:
