The PulseAudio latency interferes more with AEC (acoustic echo cancellation). Sometimes even Skype, that has one of the best AEC implementations, cannot do a good job when using PulseAudio.

is to have all three audio devices in Linphone (input, output, ring)

the default ALSA device is routed to PulseAudio.

To address Simon's question, the drawback in that setup is that the
ringer device is the same as regular audio output.  I like to speak on
the headset but have trouble hearing the faint ringing on the headset
when I am not wearing it.

I think that problem might go away if PulseAudio was supported directly.
