There are a huge number of references in the manuals — for example, 
<http://lilypond.org/doc/v2.18/Documentation/notation/writing-rhythms#tuplets> 
includes a bunch of examples/snippets, and of course 
<http://lilypond.org/doc/v2.18/Documentation/internals/tupletnumber> gives all 
of the settings and properties.

TupletNumber or TupletBracket]:

The section linked above includes \undo.

\temporary should probably be added to the section introducing the \override 
command(s)…
