Have a look at the "Known issues" in the Notation Reference, under
1.2.6 Special rhythmic concerns
and change your code for something like
\new PianoStaff <<
\new Staff <<
\new Voice {
\clef violin
\key bes \major
\time 4/4
\grace a'8 (
a''1 )
}
>>
\new Staff <<
\new Voice {
\clef bass
\key bes \major
\grace s8 % <<== dummy grace in order to synchronize <<==
c1
}
>>
