You certainly could do what you want with a second voice and hidden
notes, something like
<< {c1} \\ { \hideNotes c2.\glissando c'4 \unHideNotes } >>
OTOH, you can do without the second voice by hiding one note but also
adjusting the durations:
c1*63/64\glissando \hideNotes c'64 \unHideNotes
