To have the arpeggio connected in the two staves of a "PianoStaff", I used
the following property:
\set PianoStaff.connectArpeggios = ##t
Then, you could just write "\arpeggio" at the corresponding locations:
< aes' c'' f''>\arpeggio
and
f'\arpeggio
