The Learning Manual explains about controlling the visibility of objects, including the differences between \omit and \hide (and the underlying overrides), in section 4.3.1. Section 4.7.1.ii ‘Simulating a fermata in MIDI’ http://lilypond.org/doc/v2.19/Documentation/learning/other-uses-for-tweaks#simulating-a-fermata-in-midi then repeats some of this explanation.
