Actually, there is a way to do this:
mpdolce =
#(make-dynamic-script
  #{ \markup { \concat { \dynamic mp
                         \with-dimensions #'(0 . 0) #'(0 . 0)
                         \normal-text \italic " dolce" } } #})
Maybe we should have \pointificate as a shorthand for \with-dimensions  
#'(0 . 0) #'(0 . 0) as that is likely the most common usage.
