"Two adjoining but non-overlapping strokes". You still need to close the gap between the stroke end circles. And "adjoining but non-overlapping" does not meet the "combination of independent strokes" assumption from the Evince antialiasing (a fabulously bad idea for a PDF previewer anyway, since PDF does not allow for multiple identical strokes to result in different blackness levels).

And "adjoining but non-overlapping" is a recipe for disaster anyway. I don't expect this to work reliably even with strokeadjustment switched off. With strokeadjustment on, gaps are even expected according to spec.

The only simple (=single-stroke) stems making sense are completely rounded (and those will not merge well into noteheads) or completely sharp.

"Filled area" should have been a nice bet, but it is not strokeadjusted (but strokeadjustment does not survive into PDF anyway with the current settings), and too many previewers get it wrong (probably rendering left and right edge independently and just putting pixels where the outcome is different) for it to be of use.
