The two methods of setting beatStructure are not exactly equivalent:
using \time #'(...) m/n causes the time signature to be printed but
\set Timing.beatStructure ... does not.  So a straight replacement is
not appropriate.  The \time method simply needs to be documented as
an available option, useful if the beatStructure does not change after
setting.  A better place for this is under Time signature in NR 1.2.3.
