This seemed a bit weird:
[pid 12276] open("/opt/nmrfam-sparky-linux/lib/libQtCore.so.4", O_RDONLY <unfinished ...>

nmrfam-sparky-linux is another graphics program. Why would octave use this library?

Can you open random X applications from commandline (e.g. xev, or xclock)?

Sorry, xdev and xclock both work.
Could you run
strace octave > /tmp/output 2>&1
OK, that was inconclusive (nothing strange in that output). Maybe something will show in the trace of the actual octave process, so we need to see them all. Please send me the output of

strace -f octave > /tmp/output 2>&1

Sorry for leading on this goose chase, but this is a little mysterious.
