I had a similar problem in pcolour after updating kubuntu LTS versions. Downgrading gnuplot version 4.4.3-0ubuntu3 to 4.2.6-1 from lucid gave line-free plots. This might be a workaround for you.

I think I tried different versions of octave and the then dev version of gnuplot and got the same results, which might suggest it's a gnuplot/octave 'interface' bug.
