Hello Fausto,

depending on your experience, you can either compile the latest development version from source

http://wiki.octave.org/Debian#Compiling_from_source (this applies to Ubuntu as well)

or just to get a fast impression of the GUI, you install the GNU Octave development preview PPA

https://launchpad.net/~octave/+archive/unstable (a bit outdated, the version of last September should contain the GUI as well)
