From my understanding, I cannot install octave-headers because I'm
on a mac and the compiling should possible with xcode installed. I
cannot find the mkoctfile anywhere.
Any suggestions would be much appreciated!

how exactly did you campile Octave, in particular what options did
you pass to configure?
Do you have a version installed by Fink in addition to the one you
compiled yourself?
