Hi,

from the manual:

The `print' command allows you to save plots in a variety of formats.
For example,

     print -deps foo.eps

writes the current figure to an encapsulated PostScript file called
`foo.eps'.

[...]

For more information simply type doc print into the octave terminal. These commands also work in Matlab and provide a nice way to automate the production of images. No fancy GUI needed here. ;-)
