Uhmm, some text was removed from my previous message.
One more try:
cd /Applications/Gnuplot.app/Contents/Resources/lib
mv libfreetype.6.dylib libfreetype.6.dylib.bak
ln -s /usr/X11/lib/libfreetype.6.dylib .
