Perhaps what you need to know is how to change the font used by Octave?
You can change the default fontname used by all plots by beginning you Octave
session with ...
set (0, "defaultaxesfontname", "Arial")
set (0, "defaulttextfontname", "Arial")
Or to change the font for all existing objects ...
h = findall (0, "-property", "fontname");
set (h, "fontname", "Arial")
