Actually you can. In my job we use Octave for this.

In particular with Octave you can:

1) Generate an impulse response (IR) from any of the standard methods, for instance, from the recording of a swept sine.

2) Once you have the impulse response, you can derive any acoustic value, like the reverberation time, with you can deduce with the Schroeder backwards integration method.

As for the precise formulas you have to implement, check any acoustics textbook. It's generally straightforward. You may find some code examples on the web http://www.mathworks.com/matlabcentral.
