Something like that? It gives a red a green and a blue mesh
colormap([1 0 0; 0 1 0; 0 0 1])
[x, y, z] = peaks;
mesh (x, y, z, ones(size(z)))
hold on
mesh (x, y, z+5, 2*ones(size(z)))
hold on
mesh (x, y, z+10, 3*ones(size(z)))
