Hm, I see. That's strange. I see you're not saving an ordinary matrix,
but 3d array of unsigned integers. I thought that would also produce
just text. Even more strange, Octave here complains that it can't load
the file you created.
The -ascii option should work, though...

Filename extensions are meaningless. They're a convention but not a
necessary one, much less on a Linux-based system. The contents of the
file say what the file is, not its extension.
