did you enable somehow multi-bytes fonts in gnuplot ? For instance, having
gnuplot*font: mbfont:-*-times new
roman-medium-r-normal-*-*-*-100-100-*-*-iso10646-*
in .Xresources, or explicitelly specifying a utf-8 font ?
